Favuzzi - Espelette Pepper
Before being crushed into powder, Espelette pepper is dried on mesh tables for at least 15 days. After their stems are removed by hand, the peppers are oven-dried, then processed into powder. Esplette is a variety of Capsicum annuum that is cultivated in the French commune of Espelette, Pyrénées-Atlantiques, traditionally the northern territory of the Basque people. It is highly sought after spice for garnishing dishes and dark chocolate desserts.
