The colour is as rich as the flavour in these puy green lentils. dark green-blue with a nutty and earthy taste, these lentils are small and require no pre-soaking. they remain firm when cooked and are a great side dish to many traditional french dishes like duck confit or goose. they can also be used in lighter fare such like a roasted potato and asparagus salad.
