Pomegranate molasses is a syrup of boiled pomegranate juice, most commonly used in Middle Eastern cuisine. It has an intense sweet-and-sour flavour that is often compared to balsamic, and like balsamic, a little goes a long way. Just a bit adds an umami to tagines and stews, and so much more.
