Curtiriso - Carnaroli Rice

Carnaroli is a rice variety destined for the risotto pot -- it has higher starch content and a firmer texture and slightly longer grains than other risotto rices, like arborio. It keeps its shape better -- Marcella Hazan, doyenne of Italian cooking, thought that caranoli was the preferred rice for a perfect risotto.
